This dal is cooked slowly in a clay pot called Kudua, and no one stirs it with a ladle during cooking. The recipe is basic – just toor (Harada) dal, water, salt, turmeric, crushed ginger, and hing water boiled together. Near the end, jaggery is added to make it sweet and thick. The final touch is sprinkling whole cumin seeds and pouring hot cow ghee over them, which gives the dish its pure, divine quality.
